I have a stockpile for corpses but hauling to it seems like it's often the very last task my dwarves ever do, so the corpse will have already rotted by the time they get to it. dwarves won't even think about butchering corpses that aren't stockpiled. The corpse is in a stockpile or within a small radius of the butcher's workshop.
